Created by Executive Sous Chef Tony Leung, the menu reimagines local culinary traditions through a contemporary lens.
The savoury selection includes House-Made Siu Mai with mushroom X.O. sauce; Corned Beef, Mild Cheddar & Peanut Butter Sandwich; and Caramelised Oyster & Ginger Tarte Tatin.
Traditional scones take on new flavours with Scallion & Sesame and sweet Red Date, served with Cornish clotted cream and tart hibiscus strawberry jam.
The menu continues with the iconic milk tea popularized from neighbourhood cha chaan tengs, reinterpreted as an Opera Cake, alongside a delicate Choux Pastry with Pineapple Curd that captures the nostalgia of a pineapple bun.
Completing the sweet selection are tributes to classic Cantonese desserts, including the Salted Tangerine & Red Bean Mousse Cake and a Soy Chantilly & Coix Seed Tart.
